EGGPLANT AND PINE NUT SAVORY MUFFINS
Ingredients
2 cups self-raising flour
1/4 cup grated cheese
1/2 cup of yogurt
2 tablespoons extra vigin olive oil
2 eggs
Dash of milk if required
1/4 cup pine nuts
1/2 cup of chopped marinated eggplant
Salt and pepper to taste
Directions
Grease a muffin tray (should make about 12)
Mix all ingredients together and bake in a hot oven for about 15 - 20 minutes.
Serve hot with cream cheese or butter if desired
